Way too much work Quietman. Just gut 'em, don't cut off their heads or scale 'em. Then dredge them in seasoned flour and place them into a hot pan with good Greek extra virgin olive oil. Served hot with lemon wedges. Eat the whole thing. Yum, yum, crunch, crunch. Don't forget the Ouzo!
