well along I-70 you follow the Colorado River, around the town of rifle there are some ponds off the that might hold some fish. If you continue south on I-25 to HWY 50 then take that east to Grand Junction (and I-70) you go through the Black Caynon of the Gunnison, which is awsome, and the gunnison river is supposed to be exclent for trout. Check out this link
