I have been doing a lot of fishing off a kayak in the ocean and believe it or not i use a very inexpensive inflatable kayak that i got at Costco. It is thick plastic and has never deflated on me, it is very comfortable and does the job just right, you may want to look into it as a inexpensive alternative to a hard plastic one.
