Anyone have a different method of cooking longfins besides marinading and barbacuing it, smoking it, or tuna salad? Thanks in advance for any info.

My friends have been cooking it in the pressure cooker and jaring it. I am telling you it is awsome and last for a long time. I am going to cook alot this way this season.

I also make a kabob sandwich. I marinade the tuna in a sauce of butter and white wine, with lots of tarragon. Just for a few minutes. Then barbque the kabobs. Then place in good rolls. They are the kind.

I'm a little confused as to if you want BBQ recipes or not, but here's a good one. I tried some a friend cooked up the other day, it was awesome. And I hate cooked fish usually. What he did was take the fillet and vacuum seal it in a mix of salsa and Hui Hui sauce (this is a Hawian marinade I think). He then left it for 2 days at almost freezing (this probably is not necessary), then we grilled it up. I didn't get to it until it was sitting for almost 2 hours on the table. Man was it good, must have had 2lbs. I wasn't even hungry.

Hopefully I'll get some monday, then I too can give this recipe a try.

Thanks Guys,
All your suggestions were really helpful, havent tried Amish Ed's recipe yet, that one will be tonight. The Allcoast board has some good recipes too, Ill be sure to try those. We are considering buying a pressure cooker if we get invited to go tuna fishing again.
